Medium-bodied, dry, toasty and rich, with subtle layers of smoke, ripe pear, and apricot. Hints of almonds, brioche, and saline, with medium-acid and a slightly tart and fresh finish.
An elegant Champagne from twenty-five-to-fifty-year-old densely-planted vines from Lhéry in the western part of the Marne Valley, France. Grapes are fermented for two weeks in stainless steel, then undergo a slow malolactic fermentation for around a month, with 4g/l dosage. The wine is left in tank and old Burgundian barrels for eight months, before being bottled un-fined and unfiltered, then aged for another twenty-four months in bottle.
