The grapes for this wine were sourced from twenty-year-old vines rooted in clay and limestone soils at 300 to 400 meters above sea level. As of 2020, Quentin has decided to switch the production of Sec Symbole to the south as he is getting less and less fruit from his Azay vineyards (almost no harvest this year) and he is happy with the source he gets his fruit from in the south where the yields are more consistent.
