It's crafted using whole-cluster fermentation sealed airtight in vats for nearly 30 days. We earn the name by doing absolutely nothing during this time—no punch-downs or disruptions allowed. Once the lids are popped and the intact bunches are pressed, the wine finishes in stainless steel tanks to keep the final pour crisp, lively, and packed with fresh fruit flavors.
